Selecting a Chocolate
Chocoholics will quickly tell you that chocolates are not all the same. They differ in the amount of cocoa butter, cacao, appearance, and palatability.
Types of Chocolate
- Dark: contains 70% cacao, cocoa butter, and sugar.
- Milk: contains 10-40% cacao, sugar, and milk solids.
- White: contains zero cacao, butter, sugar, and vanilla.
Forms of Chocolate
- Baking Bars: used for baking and cooking; not ideal for use as a candy coating. Taste is bitter.
- Chips: used in baking and cooking; not ideal for use as a candy coating. Stabilizers prevent proper melting and ability to harden for a candy coating.
- Wafers: used for candy making and coating. Dries easily.
Selecting Coffee Beans
Selecting a coffee bean is dependent upon that taste and crunch you desire. When making chocolate covered coffee beans, there are a few things to keep in mind.
- DO NOT use light roast coffee beans. These beans can be difficult to chew and could easily break a tooth.
- Darker roasts are best for chocolate covered beans because they are more brittle and easier to chew. The darker the roast, the crunchier it will be.
